Defiance Ridge is happy to invite you to our first annual Pinot Noir Dinner. This dinner will showcase some of the most fantastic Pinot Noirs available. We will be pairing this year’s six course dinner with exciting Champagne, Brut Rose Sparkling, and (of course) Pinot Noir. These wines have been paired together by our culinary team to create a satisfying experience that you will not want to miss.

Appetizer

Stuffed Mushrooms & Balsamic Bruschetta

Paired with our Brut Rose from Bieze Vineyards

It is a slightly carbonated wine made using the French method “charmat.” During this process the winemaker adds carbon dioxide to the wine under pressure in its tank. This is the fastest way to make sparkling wines.

First Course

Arugula Salad roasted red peppers, capers, chopped kalamata olives & soft goat cheese with a tarragon vinaigrette

Paired with 2014 Holloran Meute de Chiens Vineyards Meute de Chiens

French for “pack of dogs”, this grape was first planted in 1999. The vineyards are at an elevation of 675 feet and are located off the famous Worden Hill Road in Dundee Hills. This velvety wine has a rustic earthy nose with aromas of black fruit. Like jazz, perfect for any occasion.

Second Course

Jumbo Lump Crab Cakes drizzled with chipotle aioli

Paired with Gallimard Champagne

For seven generations the Gallimard family has been producing Champagnes. Tonight we enjoy one of their best Champagnes. A wine full of rich and enticing aromas. This medium- bodied Champagne will surely draw you in with its charm.

Third Course

Served with Smoked Pork Loin topped with apple chutney & served over pimento cheese grits

Paired with 2016 Caldwell SOS (Society of Smugglers) Pinot Noir

John Caldwell has created a legacy for himself in the wine industry. Caldwell is well known for smuggling Bordeaux root stock through Niagara Falls and planting them in Coombsville. Together with his winemaker, Marc Gagnon, who previously worked for Screaming Eagle and Bryant Family Vineyards, they developed a philosophy of slow fermentation using dry ice, which slows down the fermentation process. Caldwell, who has one of the only cooper masters in the world, helped create this wonderful Pinot Noir. This elegant wine is full of rose, cassis, and cherry-strawberry flavors. It’s mild tannins makes this a wine that anyone can enjoy and savor.

Fourth Course

Fried Chicken Thighs fried to perfection over a cornmeal fried green tomato & mustard seed sparkling wine cream sauce

Paired with NV Philippe Gamet/Caldwell Vineyards Champagne

There’s something deeply beautiful about small production wines. Each has its own story that is uniquely theirs and must be savoured. This small production Champagne produced in France, aged at Caldwell Vineyards. A wonderful blend of Pinot Meunier and Pinot Noir that is hard to find stateside for under $100 dollars. It has lovely citrus and lemon notes and a clean crisp finish.

Fifth Course

Oven Roasted Duck Breast celery, onions, carrots & fresh garlic cloves, finished with our estate honey

Paired with 2017 Ayres Pioneer Pinot Noir from the Ribbon Ridge AVA

This Pinot Noir is made by fellow Missourian, Brad McLeroy. Made from the smallest AVA in Oregon, only ¼ mile wide and 3 ½ miles long. Some say this area offers the darkest fruit expression of Pinot Noir in all of Oregon. This Pinot Noir has beautiful dark blackberry fruit, clove, and leather notes. Also: 2015 Joseph Drouhin – Aloxe-Corton From Cote-d’Or Burgundy, in a sub-region of Beaune, this Burgundy is produced by the Joseph Drouhin family. They began making wine in 1890 in France. In 1987, the Drouhin family purchased land in Dundee, Oregon and now produce Burgundian wines. So admire its well- structured and vibrant red color and savour its candied fruits and spices.

2015 Raptor Ridge Methode Champenoise Sparkling

Another Missourian, Scott Shull grew up in Des Peres. In 1995, he founded Raptor Ridge in Oregon. His Harbinger Vineyard is planted at an impressive elevation of 800 feet. After years of low yields, Scott decided to make Sparkling Wine. This dark colored wine is cold soaked for 96 hours on its skin before disgorgement.
